Merci drew inspiration from the architectural styles of Yucatán’s henequen haciendas and the French “Estrella de Legrand” train stations. The design marries these influences, blending arches supported by wooden structures with steel, mosaics, and concrete elements reminiscent of French railway architecture.
The space is organized around wooden vaults, with the first bay being larger and segmented by metal frames and meshes, creating a sense of spaciousness and continuity. The mix of exposed brick, French ceramics, and polished concrete floors with “pasta” tile rugs results in a rich, textured environment that aligns with the restaurant’s artisanal, fresh, and detail-oriented cuisine.

Merci 60, the latest venture by Chef Regina Escalante, represents a renewal of the Merci brand, opening in Mérida with a reinterpretation of the original concept. The challenge was to maintain the essence of the first Merci while introducing new materials and finishes.
This 154 m² space emphasizes the experience and senses, creating a visually engaging environment. The exterior is marked by oxidized steel cladding, giving it a distinct yet familiar presence akin to French cafés.
Inside, the height and breadth of the space are enhanced by ceiling openings that mirror the intricate patterns of the pasta tile floor below. The furniture and lighting create warmth, while the central piece breaks the monotony and provides strategic flow within the space.
